The National ‘Firewater’
A Cypriot pomace brandy produced from the distillation of a mixture of grape pomace and local dry wines, Zivania is colourless and alcoholic with a light aroma of raisins.
With an alcohol content of 40 – 95%, it is no surprise that NCY’s national drink of Zivania is also referred to as ‘firewater’.
The strong drink dates to the 14th century when the island was under Venetian rule and is still made in the same tradition today. Grape pomace (pulp, peel, stalks and seeds) mixed with high-quality dry wines made from indigenous grapes are then distilled and mellowed for a long period.
Distillation of the fermented mess of grape remains and water takes place in a ‘kazan’copper pot. Using different processes to produce distinct qualities and intensities, a very slow process usually lasting eight hours, turns tons of pomace into a highly potent clear liquid.
Not for the faint-hearted, Cypriots consume zivania throughout the year usually as an aperitif, and during the summer it is served ice cold.
The old village custom is to down a gulp on cold mornings or enjoy a small measure with meals. Before modern medicine, Zivania was indeed an essential first-aid staple in every Cypriot home used to treat and sterilise wounds, to soothe muscular aches and to numb toothaches. It is also used as a cleaning agent and disinfectant.
Plenty of village folk still make it at home and certain varieties can be seriously strong, so if you are interest in trying this speciality, you can either purchase from a supermarket or head out to the villages for that extra kick.
As North Cyprus is not bound by European legislation restricting alcohol content to a maximum 60%, you can find Zivania varieties with up to 95% alcohol presence, but precaution in consumption is well advised. A renowned saying among Turkish Cypriots states, “the best Zivania is the one that burns well when you set it on fire”.
It is strongly recommended to seek advice on alcohol levels before trying this local beverage – a few swigs of this tipple will leave you feeling on top of the world.
